The food

In 1990, Nuno Vilas Boas decided to exchange the Amsterdam restaurant, where he worked as chef, for the simple kitchen of a rustic taberna in a village near Cercal, which he had bought and restored.

His love for the natural surroundings and the influence of living in this mythical corner of Portugal, Alentejo, were soon reflected in his cooking and in his paintings (Nuno is also an artist). Over the last 15 years, Verdemar has welcomed countless guests from all over of the world, not only to relax, but to enjoy the easy-going family atmosphere and the appetizing gourmet meals which Nuno delights in preparing.

After long years spent in the bustling, multicultural metropolis of Amsterdam, with its great variety of fancy cuisine, Nuno has opted for the peace of the countryside and the simplicity of rural fare – natural products, fresh fish, local meat and vegetables from his garden.

Some dishes for the guests to enjoy:

  • Couscous salade with tomatoes, coriander and pine tree seeds, grilled vegetables with three kinds of cheese and oregano
  • Escabeche from ray, with balsamico, honey and herbs
  • Free range chicken in wine with peppers from the garden
